Our Favorite Seasons

Here in South Carolina, most seasons have their redeeming value. Summer, however, does not. It is strictly HOT, meaning no one really is interested in outdoor activities. Our favorite seasons are:
Autumn, when the temperatures cool, the apples are ready, and we can once again turn off the air.
Winter, when the chance of snow, no matter how small, fills everyone with hope.
And Spring, when peers and trees bloom, windows are open, and the world is filled with the promise of a new day!

Jessica's Favorite Chocolate Cake

This is the chocolate cake I make for birthday's in this house!  Everyone loves it, and it is moist and super chocolatey!  For Mandy's birthday, I made the cake in 9" round pans, filled and topped it with fresh, homemade whipped cream and strawberries.  Wow, was it good!  I hope you enjoy this as much as we do!

Chocolate Cake:

Ingredients:
2C white sugar
1 3/4 C all-purpose flour
3/4 C cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1C evaporated milk
1/2 C vegetable oil
2 tsp vanilla extract
1C boiling water

Directions:
Heat oven to 350 degrees F.  Grease and flour two 9-inch round baking pans.
Stir together sugar, flour, cocoa, baking powder, baking soda, and salt in large bowl.  Add eggs, milk, oil, and vanilla; beat on medium speed of mixer for 2 minutes.  Stir in boiling water (batter will be thin).  Pour batter into prepared pans.  Bake 30-35 minutes or until toothpick inserted in center comes out clean.  Cool for 10 minutes; remove from pans to wire racks.  Cool completely.  Frost.
